In 2006 Chloé Doutre-Roussel invited us to join the chocolate revolution in her book The Chocolate Connoisseur: For Everyone With a Passion for Chocolate. During the same year Slow Food Revolution: A New Culture for Eating and Living by Carlo Petrini was published . It was obvious the day of low quality/high volume, industrial approach to food are numbered. Because we are what and perhaps how we eat.
The act of eating is very common, it is after all a necessity. However if we add interest, knowledge, appreciation to it, if we stop the rush, relax and become aware – a unique moment could be created.
To take a piece of aromatic, high quality chocolate in your hand, to explore its appearance, aromas, to let it slowly melt in your mouth and inform you about its texture and flavor implies being part of a new, sophisticated culture.
Eating less and better. Protecting your taste buds from excess sugar, salt and acidity…Realizing what a divine and rare gift well made Criollo chocolate is (Criollo variety cacao beans represent only 0.001%). Appreciating the radically new way of growing, selecting and roasting cacao carefully and in small batches, processing it as little as possible, and performing some operations by hand. Savoring it slowly and deriving more pleasure out of the moment. Knowing it was good for our health we might even consider resurrecting the Rainforest and restoring the diversity of cacao in a way that is respectful of man and the environment.
When it comes to chocolate the truly important thing is to put quality in the center of the experience. Then there is also possibility to share so many stories about cacao and chocolate. Approaching it from the point of quality means we might become more discerning. Chocolate is a meaningful and affordable luxury for the senses. No more mindless consumers we become instead co-creators of an experience which is better for us and the environment. We might embrace the Cacao Culture, which Domori defined as appreciation, respect and revival of noble cacao in its powerful expression – the aromatic chocolate.
Let’s unite to celebrate the pleasures of the palate and give back to the rainforest. We, the informed and conscientious consumers, posses the power to create a better future, BonaVita, for all through the enjoyment of most superbly crafted and ethically produced chocolates in the world.
